Chicken Soba Noodle Salad

This Chicken Soba Noodle Salad combines protein, fibre, satisfying carbohydrates and healthy fats in one fresh and flavour-packed meal. It is quick to prepare, easy to customise and perfect for a nourishing lunch or weeknight dinner.

Ingredients:

• 1 chicken breast, diced
• 1 serve soba noodles
• 1 cup edamame
• ½ bunch broccolini, chopped
• 3 tablespoons tamari
• 1 tablespoon olive oil
• Chilli, to taste
• Sesame seeds, to serve

(makes 2 serves)

Instructions:

Heat the olive oil in a frying pan over medium heat. Add the chicken and cook until golden and cooked through.
Meanwhile, bring a saucepan of water to the boil and cook the soba noodles according to the packet instructions. Drain and set aside.
Steam the edamame and broccolini until tender.
Pour the tamari over the cooked chicken and toss to coat.
Add the soba noodles, chicken, broccolini and edamame to a large bowl.
Sprinkle with chilli and sesame seeds.
Toss everything together and divide between two bowls to serve.
