Freezer Breakfast Burritos

** High protein, high fibre and family friendly freezer breakfast burritos that can be cooked straight from the freezer and ready in just 10 minutes in the air fryer.

Ingredients:

  • 1 tablespoon olive oil, coconut oil or ghee

  • 400 g sausage mince (pork or preferred option)

  • 10 eggs, whisked

  • 1/2 cup corn kernels

  • 1 cup roasted peppers

  • 1 cup baby spinach, chopped

  • 2 teaspoons cumin

  • 2 teaspoons paprika

  • Approximately 15 corn tortillas

  • Approximately 2 cups guacamole (store bought with minimal additives)

  • 1/2 cup salsa

2 cups shredded cheese, optional

Instructions:

  1. Heat oil in a large pan and brown the mince

  2. Add vegetables and spices and stir briefly

  3. Pour over eggs, allow to sit briefly, then scramble through

  4. Once eggs are set, remove from heat

  5. Lay a tortilla on foil and add guacamole, filling, salsa and cheese

  6. Roll and wrap tightly

  7. Freeze burritos individually wrapped

  8. Defrost overnight if possible, then air fry for approximately 10 minutes

  9. If cooking from frozen, microwave for 2 minutes each side then air fry

  10. Store frozen for up to 3 months
