Collagen Glow Yoghurt Bark

* This is one of those simple freezer treats that feels a little bit indulgent while still supporting your hormones. With protein from collagen, healthy fats from nuts, and antioxidant-rich berries, it is a delicious option for an afternoon snack or something sweet after dinner. Best of all, it takes only a few minutes to prepare and keeps beautifully in the freezer.
Ingredients:
- 1 cup coconut yoghurt (or Greek yoghurt - if tolerated)
- 1 scoop InnerBeauty Collagen
- 1-2 tbsp honey or monk fruit sweetener
- ½ cup berries of choice (blueberries, raspberries, strawberries)
- Nuts of choice for toppings (such as unsalted pistachios or almonds)
- Optional: melted dark chocolate for drizzling
Instructions:
- In a bowl, combine the yoghurt, InnerBeauty Collagen and sweetener. Stir until smooth and creamy.
- Line a tray or plate with baking paper and spread the yoghurt mixture evenly to approximately 1cm thick.
- Sprinkle over the berries and chopped nuts. Drizzle with melted dark chocolate if using.
- Place in the freezer for 2-3 hours, or until completely firm.
- Break into bark pieces and store in an airtight container in the freezer until ready to enjoy.
