Warming Turkey, Lentil & Veggie Stew

This warming turkey, lentil and veggie stew is a nourishing, satisfying meal that brings together protein, fibre and plenty of colourful vegetables. It is easy to prepare in one pot and makes a great option for batch cooking, with leftovers that can be enjoyed throughout the week.

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 450 g ground turkey mince
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 cup red lentils, rinsed
  • 1 x 400 g can diced tomatoes
  • 4 cups vegetable stock
  • 1 medium zucchini, diced
  • 1 capsicum, diced
  • 2 cups fresh spinach
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice
  • Chopped fresh parsley, to garnish

OPTIONAL SWAPS:

  • Replace the zucchini with diced eggplant or mushrooms.
  • Swap some of the lentils for chickpeas or cooked quinoa for a different texture.
  • Add extra stock if you prefer a thinner, soup-like consistency.

(Serves 4)

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, then sauté until softened and translucent.
  2. Add the turkey mince and cook, breaking it apart with a spoon, until browned and cooked through.
  3. Stir through the cumin and paprika and cook for another minute, until fragrant.
  4. Add the lentils, diced tomatoes, vegetable stock, zucchini and capsicum. Bring to a boil, then reduce the heat and simmer for 20–25 minutes, or until the lentils and vegetables are tender.
  5. Stir through the spinach and allow it to wilt. Season with salt, pepper and lemon juice.
  6. Serve warm, garnished with fresh parsley.
